Every time I make chocolate chip cookies, I can’t help but think of that one Friends episode with Phoebe’s grandma’s “secret cookie recipe”. Monica’s about to get married and Phoebe’s present to her is this special, secret family recipe. They both rave over the cookies and try their best to figure out the ingredients from tasting the last cookie from the batch. It turns out the recipe was just off the back of the Nestle’s chocolate chip bag.
There’s nothing like a warm, gooey chocolate chip cookie right out of the oven. I love breaking them apart and watching the melted chocolate ooze out. And nobody can deny the sweet smell of cookies baking in the oven, I’m pretty sure you have no soul if you dislike it. Don’t even get me started on the cookie dough too. I mean, I just cross my fingers and hope that I won’t get salmonella while I scoop a little dough out for a taste test. Chocolate chip cookies are just so damn good, and there’s no denying it!
Now there’s a trick to baking the perfect cookie. You can get the ingredients measured out just right, scoop out the perfect rounded balls and place them a precise 2″ away from each other on the cookie sheet. However, the key is in how long you keep the cookie in the oven, it’s a perfect balance. To get the perfect cookie, with a crisp bottom, but soft cookie, make sure to take the cookies out before they are done. They’ll continue cooking through from the residual heat as they cool. You’ll know when they’re almost there when the tops of the cookies just start cracking and are slightly puffy. After making dozens of batches I’ve found this is the best way to get the most delicious chocolate chip cookie ever.
But most of all, make sure you enjoy and have a tall, cold glass of milk sitting next to you!
Chocolate Chip Cookies

Yields: ~2-3 dozen cookies / Prep Time: 20 minutes / Bake Time: 8-10 minutes
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
1. Preheat oven to 375° F.
2. Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
3. Bake for 8-10 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
